I’m always experimenting with trying to make treats healthier, to make up for the fact that no one in our family — particularly the parents — have ever met with much success with portion control. Last week I made these cookies from Love & Lemons and my husband and I agreed they were the most delicious healthy recipe I’ve ever baked. I didn’t have any quinoa on hand so I just used a little extra oat flour and flaxseed meal, and I cut up a half apple I needed to use and threw it in in place of the cranberries. True to form, we ate them all in just a few sittings.
